2. Banana Oat Pancakes



1 ripe banana

1/4 teaspoon baking powder

Pinch of salt

For cooking, use butter or oil.

2 ripe bananas, mashed

1/4 cup almond butter or peanut butter

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1 1/2 cups rolled oats

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/4 cup raisins or chocolate chips (optional)



Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

Mashed bananas, peanut butter, almond butter, honey, or maple syrup, and vanilla extract should all be combined in a big basin.

Add the optional chocolate chips or raisins, cinnamon, salt, and rolled oats and stir until well blended.

Mix thoroughly to include all the components.

To help the oats and chia seeds absorb the liquid and soften, cover the container and refrigerate for at least 4 hours or overnight.

Stir well in the morning and top with your preferred toppings, including sliced fruit, almonds, seeds, coconut flakes, or a dollop of nut butter.

If you want your overnight oats a little warmer, leave them out at room temperature for a few minutes before eating your rich and creamy treat straight from the refrigerator.


5. Savory Oatmeal with Fried Egg and Avocado



1/2 cup rolled oats

1 cup water or broth

Pinch of salt

1 egg

1/2 avocado, sliced

Sprinkle of chili flakes or hot sauce (optional)

Fresh herbs for garnish (cilantro, parsley, chives)



Bring the broth or water to a boil in a saucepan.

When the rolled oats are cooked to your preferred consistency, whisk in the salt and rolled oats, lower the heat to low, and simmer for five to seven minutes, stirring now and again.

Fry the egg in a separate skillet until the whites are firm but the yolk is still runny while the oats are cooking.
